How Sweet it Is
Most low carb candy is sweetened with polyols, which are sugar alcohols. The most widely used and well-known polyol is maltitol, but there are others:


Sorbitol - Too much of this one can cause cell damage in your eyes and nerves.
Lactitol
Xylitol - This one actually prevents tooth decay!
Mannitol


Although polyols have carbs, they are good for people on a low carb diet because they can sweeten food without those carbs being absorbed, and carb absorption generally leads to fat. The downside to polyols is that they do have sort of a laxative effect.
